Apple Scones

One of our favourite recipes for autumn. 🍎

A warm, fresh-baked scone and a freshly brewed coffee on a cool, crisp morning by the woodstove. It doesn’t get much better than that.

Here’s the recipe. ☕️🔥

Ingredients

Scones

  • 2 cups flour
  • ⅓ cup sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ cup cold butter or margarine
  • 1 cup shredded apple
  • ½ cup milk
  • 1 tablespoon sugar and cinnamon for sprinkling, if desired

Glaze

  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 425°F.
  2. Combine the flour, sugar, baking powder, baking soda, and cinnamon in a bowl. Mix well. If you like a spicier scone, add another ½ teaspoon of cinnamon—or try a little nutmeg or cloves.
  3. Cut in the cold butter or margarine until the mixture resembles coarse crumbs.
  4. Shred the apple and add it to the dry ingredients. Pour in the milk and mix until a soft dough forms. Add a little extra flour if the dough is too sticky, depending on how moist your apple is.
  5. Knead the dough a few times, working in just enough extra flour so it’s barely sticky.
  6. Divide the dough into two balls. Flatten each into a circle approximately 6 inches in diameter. If desired, lightly score the tops into 6 wedges.
  7. Place the scones on a well-greased baking sheet. Sprinkle with brown sugar and/or cinnamon if desired.
  8. Bake for 15–20 minutes, or until golden brown. Remove from the oven and allow to cool.
  9. Once cooled, whisk together the powdered sugar, milk, and vanilla until smooth.
  10. Drizzle the glaze over the scones and allow it to set completely.

Best served warm with a fresh cup of coffee. ☕️🍎🔥

Additions & Tips

  • For a spicier autumn flavour, add a little extra cinnamon along with some nutmeg and cloves.
  • We often make these using our cast iron muffin pan, which gives them a great shape and a nice crust.
  • Keep an eye on the cooking time, especially when using a muffin pan. Ovens and pans can vary.
  • To check if they’re done, insert a toothpick into the centre. When it comes out clean, remove the scones from the oven.
